I first enjoyed Aged Sulawesi from Peets Coffee, but it became extremely difficult to find. Recently I purchased nine pounds (to take advantage of Moore's special sale and to buy it while I could)of Green Aged Celebes beans and have roasted about two pounds to a medium-dark roast.I've found that the aging and darker roast bring out the richness of the bean, and my first few batches were no exception especially when brewed strong. The coffee was rich and (this is the great taste of aged beans) earthy. My substitute for aged beans has been aged beans from India, but they pale in comparison to the richness of the Celebes. I gave a gift of some of the coffee to friends, who brewed a pot for the fellow who first introduced me to aged beans many years ago. He did not know what the coffee was but exclaimed "This is the best coffee I've had in forty years!" How can you get a better recommendation - and from a blind taste from a knowledgeable coffee afficionado?A great coffee at a great price.
