In the Jaen Province of northern Peru the highlands are warm and rainy. Small farms grow coffee in loamy clay soils that drain well into the many rivers of the region. The 15 farmers of the El Eden "Comite" grow coffee above 1600 meters near the hamlets of Buenos Aires and El Triunfo. Coffee is mechanically depulped without water to ensure mucilage remains attached to the parchment during fermentation.
